 Ingredients (Serves 2–3)

  • 3 medium potatoes (thinly sliced with skin)

  • 2 tbsp mustard oil (cold-pressed for authentic flavor)

  • ½ tsp turmeric powder

  • ½ tsp red chili powder (optional)

  • Salt to taste

  • ½ tsp nigella seeds (kalonji) or cumin seeds

  • Fresh coriander (for garnish)


🔥 Method

1. Prep the Potatoes

  • Wash and slice potatoes thinly (about 2–3 mm).

  • Soak in cold water for 10 minutes to remove excess starch.

  • Pat dry with a clean towel.

2. Heat the Oil

  • Heat mustard oil in a cast iron or heavy-bottom pan until it begins to smoke slightly (this neutralizes bitterness).

  • Add nigella seeds or cumin and let them splutter.

3. Sauté and Crisp

  • Add the dried potato slices in a single layer.

  • Sprinkle turmeric, chili powder, and salt.

  • Cook on medium heat, flipping occasionally until golden brown and crisp (about 8–10 minutes).

4. Serve Hot

  • Remove onto a paper towel.

  • Garnish with chopped coriander.
